Recipe: Lemon & Ginger Posset with Strawberry & Cherry Coulis

One of the easiest desserts you could resort to is lemon posset, but I’ve given this one a better kick with some ginger. Topped with a Strawberry & Cherry Coulis…This is one quick and easy dessert guaranteed to delight
  • For about 1-3, you will need:
    – 1/2 cup of sugar
    – 1 cup of cream
    – Juice and zest of 1/2 a lemon
    – 10 cherries
    – About 8 strawberries
    – Cranberry juice (just enough to cover the fruit in a bowl)
    – Lime juice (2tbsp)
    – Pinch of black pepper
    – Freshly grated ginger

    Let’s begin!

    Place the cherries and strawberries in a bowl along with the lime and cranberries juices and black pepper. Trust me, this creates a spicy sweet flavour that compliments the end result. Pop this in the fridge.
    Place the cream and sugar in a pan on medium heat and bring it to a simmer for 3-4 minutes then strain into a bowl. Add the lemon juice and grated ginger, whisk and then place into 3 bowls/ramekins. Leave these in freezer for 3 hours. Posset done!

    For the cherry & strawberry coulis, pop the fruit into a blender with about 2tbsp of the marinade juices. Give it a quick blitz for a few seconds then strain the mixture through a sieve. Bring out your posset from the freezer and top with your coulis. Grab that spoon and tuck in!
