Aymeric Laporte’s goal from a corner put Bilbao ahead but Atletico equalised through Saul Niguez’s header in first-half stoppage time.
France international Griezmann scored the winner with a shot from 20 yards.
Barcelona lead the table on goal difference, with both teams on 35 points from 15 games.
Barca were held to a 2-2 draw by Deportivo La Coruna on Saturday.
Meanwhile, Real Madrid are five points behind leaders Barcelona and Atletico Madrid after losing to Villarreal in a wasteful performance.
The hosts scored early when Luka Modric lost possession and Cedric Bakambu found Roberto Soldado to place the ball through Keylor Navas’ legs.
Real, who are now only three points above fifth-placed Villarreal, had 20 shots but only forced one save.
Cristiano Ronaldo hit the outside of the post in the second half.
