Nkwobi, a native Igbo delicacy that will drive away all your burdens and worries once eaten. From what I’ve observed, nkwobi is a top notch/elite food. It is served in important native gatherings and meetings. It is also interestingly used in our Nollywood movies as an appeaser for an upset person; this shows you how irresistible this meal is.

Fortunately, preparing this meal should not prove too difficult as a step by step recipe has been put together for you.

Ingredients needed

  • Sizeable pieces of cow foot
  • Palm oil
  • 1 tbs of ground potash
  • 1 tsp ground ehu seeds
  • 2 medium onions
  • 2 seasoning cubes
  • 2 tbs of ground crayfish
  • Habanero pepper
  • Salt
  • Finely shredded utazi/spinach leaves

Procedure

  • In a small bowl, mix ground potash with some amount of water. Stir and sieve then leave to rest.
  • Wash cut pieces of cow foot and put into a pot. Add in seasoning cube, chopped onion and small amount of water, then place on medium heat to cook until well done.
  • Pour palm oil into another pot and add in the potash mixture. Gently stir as you add in the potash mixture. It begins to curdle and turn yellow.
  • Stir until it becomes completely yellow in color.
  • Pour in the ground crayfish, habanero pepper and ground ehu seeds. Mix together for proper incorporation.
  • Add some salt into the well done cow foot meat and then stir properly. Place back on heat and allow to cook until the water completely dries up.
  • Add the cow foot meat into the palm oil-potash paste that has been made and stir properly.
  • Place the pot back on a heat source and stir the nkwobi as it cooks.
  • The nkwobi is ready now!
  • Onion rings and finely chopped utazi or spinach leaves (whichever is available).
  • Can be served with any cold and chilled drinks of choice.
